Lunch Program at TIS - Organic Fresh Fingers Answers Your Questions!

Lunch delivered to TIS every day? Most parents say “great idea” though of course, there are questions, considerations and concerns. A few TIS families taste-tested the Organic Fresh Fingers meals and had mostly positive reviews. Q: How are the lunch trays recycled?
A:

  • Students will wipe or rinse clean their food trays and place them in the coolers.

  • Organic Fresh Fingers takes the used trays and washes and sanitizes them to remove all food debris.

  • Allied Waste picks them up from Organic Fresh Fingers, Inc.

  • Allied takes them to Marion Resource Recovery Facility (in Salem) - they separate the plastics from other recyclables.

  • The plastics are moved to Far West Fibers (in Hillsboro) - they sort and combine the different plastics #1-#7. They then compact them and ship the cubed, separated plastics overseas;

  • The final destination melts the plastic down, filters the plastic and re-molds them into sheets of re-useable plastic.


Q: What about the safety issues around microwaving in plastic?
A: The concern is microwaving food products in the “hard” plastics such as a number 7 piece. There is a concern with the release of diotoxins from heating certain plastics; however, this does not occur until the plastic reaches a temperature of 700 degrees Fahrenheit. We have done extensive research on this issue and are confident that it is not a concern for our food trays as we are using a number 5 plastic and the meals do not reach temperatures even close to the critical secretion point. The short cook time by serving The International School meals fresh (rather than frozen) will also ensure the safety.

Q: How big will the portion sizes be for older kids?
A: The portion sizes for the older kids will meet with the USDA Child and Adult Food Program standards for ages 6-12. The requirements for that age group are as follows: 1 cup milk, 2 ounces protein (this includes, meat alternatives, 1 egg, ½ cup cooked beans or cheese), ¾ cup total fruit and vegetable and one slice of bread/grain component. The program is a little difficult to understand without reading the USDA Food Buying Guide and Red Book. We can provide Manufacturers Recipe Compliance Sheets to explain and provide documentation of the compliance of our meals.
**Note – Organic Fresh Fingers meals do not include the recommended 1 c. milk.**

Q: Approximately how many calories for the lunches for 1st - 5th grades?
A: The calories of our retail meals (ages 3-5) have between 200-300 calories. For the older kids, we will be increasing the portion of the entrée and adding an additional side dish. This will increase the total calories by 100-200.

Q: Can you provide nutrition information?
A: Sure. See the nutrition label for one of the “younger kids” meals - the meals would have more calories for older kids. Complete nutrition information available on request.

INGREDIENTS: ORGANIC BLACK BEAN BURGERS (ORGANIC BLACK BEANS {ORGANIC BLACK TURTLE BEANS, WATER, SEA SALT, KOMBU SEAWEED}, ORGANIC CORN, CARROTS, ORGANIC WHOLE WHEAT FLOUR, ORGANIC EGGS, ORGANIC GREEN ONION, BAKING SODA, ORGANIC SPICES), ORGANIC CORN SALSA (ORGANIC CORN, ORGANIC ONION, ORGANIC CILANTRO, ORGANIC LIME JUICE, ORGANIC CUMIN, ORGANIC JALAPENO PEPPER), ORGANIC FRESH APPLES (TREATED WITH ASCORBIC ACID AND CALCIUM CARBONATE).

Q: Will you be able to deliver coolers to each classroom? (There are about 30 classes and next year we will be in 5 different buildings)
Q: Will you be able to pick up coolers with used lunch trays from each class?
A: We have developed a plan to use small, individual coolers with handles. We can deliver each of the classrooms their coolers of food as well as pick up the “old” coolers with the used trays. We will simply swap them out (we would need the number of children and their age for each classroom so that we can have the coolers all ready to go at time of drop off/pickup).

Q: Are all meals vegetarian?
A: The meals are all vegetarian at this point. We do have a few meals that we are developing using Organic chicken, however, this would increase your cost as Organic meat and dairy products are priced high. The protein we currently use the majority of are: beans, peas, lentils, egg, and cheese. We do have some meals that we use soy products as the protein (i.e. tofu and tempeh), however, we try to limit this as there has been some research indicating that it may be harmful to young children to use soy as the ONLY source of protein. We work very hard to ensure that we are using a varied source of appropriate protein components.

Q: What’s the price?
A: Price will depend on volume. This proposed price structure is based on vegetarian meals.
